Your role

Butcher

Your day in the cutting room, at the till and in the cold room. Break carcasses down, sell by weight, read the cold room and weigh out the waste, and know what needs the shop manager.

Kila describes the role in a line: “Breaks carcasses down into cuts, weighs, records waste for approval and completes the cold room checks; sells on their own shift.” A butchery gives it to its butchers; at Nyama Bora Butchery, the head butcher at Kiambu town and the butcher who runs the Ruaka outlet’s till.

Kila opens Home: “Here is the work waiting at Nyama Bora Butchery today.” From there: Open the till (1), the week’s carcass breakdowns with the yield and anything waiting for approval (2), the cold room readings today and how long since the last one (3), and the branch’s opening, closing and cleaning checks (4).

  1. Break down the morning’s carcasses as each one is cut: Break down a carcass.
  2. Sell on your own shift when you work a till: Open a shift, then Sell meat by weight, by amount or from a scale label.
  3. Read the cold room morning, midday and evening: Record the cold room log.
  4. Weigh out the waste at closing: Write off waste at closing.
  5. Do the closing clean under Branch operations, and close your shift if you had one.
  • Break carcasses down into cuts, and add and change the cutting specs.
  • Sell at the till on your own shift. Your till has Sale and Order.
  • Write stock off as waste, and count stock.
  • Complete the cold room log, the branch’s checklists, and report issues.
  • See the products and the stock at your branch.

Needs a manager

  • Waste and other stock adjustments. Your limit is KES 0.00, so each one waits for the shop manager in Approvals: “Stock has not changed yet; it changes the moment someone with a higher limit approves.”
  • A breakdown with more loss than the spec allows. It waits in Approvals before stock moves.
  • Any discount, and the price per kg. Neither is yours to change at the till.
  • Returns. Your till has no Return: a cashier or the shop manager takes them.

Open a line on the till and Kila says so: “Priced by weight. Only someone allowed to override prices can change it.” and “Your role cannot give discounts on this item.”

Otieno Ouma, butcher at the Ruaka outlet, opens a line of beef on the bone on his till: the price per kg says Priced by weight. Only someone allowed to override prices can change it (1), and the discount says Your role cannot give discounts on this item (2).Otieno Ouma, butcher at the Ruaka outlet, opens a line of beef on the bone on his till: the price per kg says Priced by weight. Why did my waste go for approval when the drawer said Within your limit? The drawer cannot see costs for your role. Kila works the value out at cost when you post, and your limit is KES 0.00.

Why are the cost columns empty on my breakdowns? What the cuts cost is for the owner and the shop manager. You see the weights, the yield and the spec.

Why is the Supplier list empty when I break down a carcass? Your role does not see suppliers. Leave it empty; the breakdown is counted under Not recorded in the yield by supplier.
